I've never had it myself which is one of the reasons I'm excited about the trip. From what I'm reading though, it's less messy than some other styles, based more on the dry-rub and the smoking than on the sauce, which is usually served on the side. Brisket and shoulder are traditional as well as ribs, so most places should have something you can eat without destroying your shirt. :)
